Abstract

School meals have great potential for absorbing production from family farming, which in turn has a great vocation for food production. Among the foods intended for schoolchildren are industrialized and fresh foods. Among the foods provided by family farming to schoolchildren are fruit pulps. Fruit pulp is defined as a non-fermented, non-concentrated, undiluted product, obtained by crushing pulpy fruits, through an appropriate technological process, with a minimum content of total solids from the edible part of the fruit, specific for each pulp of fruit. In view of the content exposed about fruit pulp and the supply of this product in school meals, the research focused on the collection of secondary data, on microbiological analyzes of fruit pulps provided by family farming for schools that make up the public school system. Study based on a literary review taken from reliable sources such as: The Scientific Electronic Library Online (Scielo), Google Scholar, Laws and Resolutions, published in scientific journals in the last five years (2015-2020). The data obtained by the research demonstrated the relevance of carrying out microbiological analysis on fruit pulps from family farming, the results enabled a wide knowledge on the subject, opening a range of discussions for possible proposals for studies and public policies to be adopted, such as the technical monitoring of the proponents for the supply of fruit pulps, enabling them in good practices in handling, cleaning, filling and storing this product.
