Abstract

This work was written and developed due to the importance of presenting and reinforcing people's knowledge, the importance of taking care of food, the means of contamination, the role of health surveillance; to avoid increasing the number of foodborne illnesses. The initial theoretical framework of this research is to improve the dissemination and application of practical knowledge in the context of food security, that is, to have a healthy diet, it is not enough to know the nutrients and their values, but to know the way of their conservation and , very important, the care with personal hygiene, of the environment, of the people who handle the food, because they are vital points for our health. The objective of this research was to analyze the practical knowledge in the context of safe food. The methodology applied in the elaboration of this work was through bibliographic research, which supported the context in general. The searches were carried out in three bibliographic databases, these being SciELO (Scientific Electronic Libray Online), PubMed and DeCS, articles from 2000 to 2015 were selected..
