Abstract

Color and reducing capacity are determining factors in the quality of a wine. These parameters can be influenced by the grape variety, cultivation conditions and winemaking techniques. Assemblages prove to be a useful tool for elaborating wines balanced in these parameters. The objective of this work is to analyze the color and reducing capacity using the PhotoMetrix app, which consists of a tool that can replace spectrophotometric analysis. As a result, it was observed that PhotoMetrix app presented good performance for analyzing the reducing capacity (accuracy values from 91.9% to 114.6%) and performed the discrimination between the different wines, based on the color by Principal Component Analysis. Furthermore, demonstrated that wines from grapes such as 'Tannat' and 'Marselan' subjected to winemaking processes such as thermovinification, provide wines with high reducing capacity. Thus, the realization of assemblages between wines that present lower reducing capacity with these types of wines, would assist in the production of wines with more balanced reducing capacity and color.
