Uso de resíduos agroindustriais para a produção de compostos fenólicos por fermentação em estado sólido

Abstract
Agro-industrial waste is a source of carbon and nitrogen and acts as a support for fungal growth. This work aimed to apply agro-industrial residues to increase the production of phenolic compounds, through solid state fermentation. The substrates used were rice bran, green tea residue and yerba mate, in different proportions. The microorganism used was Rhizopus Oryzae CCT 7560 and the bioprocess occurred in tray-type reactors, during 7 days. After this period, the biomass was frozen and the total phenolic compounds extracted. The proportion of substrate most associated to cause an increase in the production of phenolic compounds was 5: 5 (rice bran: green tea), obtaining, under conditions, a content of 22.4 mg.g-1of phenolic compounds. Thus, solid state fermentation provided a 1.5-fold increase in the content of phenolic compounds, when compared to the control, whose initial value was 14,92 mg.g-1.
