Abstract

ABSTRACT: Honey is a food product composed of substances originating from the nectar of flowers and saccharin exudates. Whose inorganic composition can be influenced by several factors from its botanical to geographical origin. In view of the growing commercialization of this natural product due to its nutritional and therapeutic relevance. The main objective of this study was to carry out a survey on the main contaminants in honey associated with possible pathological complications. Through a bibliographical research, where a search was carried out in official databases, such as: Scielo and Google academic. Where 10 main articles were selected, in the years 2020 to 2023. Making it possible to highlight the importance of research on the toxicity of honey to obtain a product with a better physical-chemical and microbiological quality, consequently avoiding risks of contamination and favoring the consumer to supply a product that does not compromise health.
