Abstract

Beekeeping in Brazil is an ancestral practice, transmitted from generation to generation, which has consolidated itself as a deep-rooted habit among the population due to the numerous benefits associated with the consumption of its products. Honey legislation includes regulations and standards to ensure product quality. According to Brazilian legislation, honey is classified as a product of animal origin, produced by honey bees from flower nectar, composed of glucose and fructose. Normative Instruction No. 11, of October 20, 2000, which establishes the Technical Regulation on the Identity and Quality of Honey, was established with the aim of preventing fraud in products, guaranteeing a safe, pure and quality product. The aim of the work was to carry out physical-chemical analyzes of honey from the city of Catolé do Rocha-PB and São José do Rio do Peixe-PB, where analyzes were carried out in triplicates for pH, total titratable acidity (%), reducing sugars (g/100g), apparent sucrose ( g/100g), ash (%), diastatic activity (Gothe scale), Hydroxymethylfurfural (mg/kg) and Total Soluble Solids (Brix), where all parameters are compared with current legislation. Physico-chemical analyzes allow to guarantee the quality of the product, highlighting quantities of each component present in the honey, allowing adulterations to be detected during the manufacturing process, in addition to standardization and consistency, allowing beekeepers to carry out corrective measures to meet the desired requirements for creation of a natural and healthy product.
